CHEYENNE - Ranch Eats Rustic Cuisine, a local food truck and full-service catering business, is expanding into a physical restaurant space, taking over the Downtown Ziggi's Coffee next to Western Vista Credit Union!
A glimpse of the history and recent events
First, let's look at Ziggi's Coffee. The Ziggi's on Thomes Avenue became Cheyenne's second Ziggi's location, but it closed late last year. Reportedly, the then-owner of two of the Cheyenne locations as well as various other Ziggi's locations had simply expanded too fast and decided to close one of his two Cheyenne stores. The Yellowstone Road Ziggi's is still operating today.

As for Ranch Eats, the company was initially filed with the Wyoming Secretary of State in late 2022. Since that time, the brand has expanded to offer service via their food trucks, catering, and pre-made meals. Furthermore, Ranch Eats has both a food truck and a food trailer, allowing them to operate at multiple locations at the same time, or even potentially serve a higher number of people at one time. They even are open to franchise opportunities!
Ranch Eats physical location coming soon
Back in mid-February 2025, Ranch Eats announced on Facebook that, "Troy and Mikaela and our amazing team...will be opening a brick and mortar location...in 2025!" They stated that they will be keeping the food trucks and catering service, even with this expansion of their business.

On March 16th, photos included in a Facebook post of theirs displayed a huge cardboard coming soon sign posted on the TV screens above the counter that was previously used by Ziggi's Coffee located on the corner of Thomes Avenue and West 19th Street, 1920 Thomes Avenue.
Their post stated that, "All equipment is ordered and arriving...new wall paper and menu boards are installed! Tables and chairs are [also] arriving." They go on to say that they will be featuring Snowy Elk Coffee Co and Josie's Creamery at the new location. In a Facebook comment, Ranch Eats clarified that their physical restaurant will feature coffee, unique breakfast and lunch items, pastries, and grab and go items.

Ranch Eat's website indicates that their "Ranch Eats Cafe" is, "coming summer [of] 2025," stating that, "[It is] going to be out of this world!" Their website also indicates that events involving their food truck service and "Ranch Ready Meals" are continuing to take place. In a visit made by Optopolis to the soon-to-be cafe, workers at Western Vista Credit Union told Optopolis that it could open as soon as one month from now.
As of early to mid April, it appears to Optopolis that there is still work to be done. While new wall paper could be seen present at the time of Optopolis' visit, the space still seemed to lack common features such as a check out kiosk, tables and chairs, and other furnishings. Edit 04/14: The owners have clarified with Optopolis that they are waiting for certain logistics to work out in order to finish preparing their space.

This isn't the first Cheyenne food truck to recently begin the shift and/or expansion into the brick-and-mortar storefront world; Nay&Jays has also been in the process of setting up shop in the Frontier Mall, and Barrett Creek Coffee recently announced plans to sell their food truck in favor of a physical retail space.
EDIT 05/01: Ranch Eats recently posted in the comments of their own Facebook post that they hope to open in June 2025. If this changes (and if so, once Optopolis discovers this info), this article will be updated accordingly.
Update 05-20: It's almost ready to open!
In a visit to the soon-to-be cafe in the morning of May 20th, the restaurant wasn't open yet, but it looks like it could open any day, as various kitchen fixtures have been installed including fridges and a coffee maker. Hours (listed below) were already posted in the walk-up window. According to a recent Facebook post, they plan to open in June.

Update 05-22: Here's when the shop opens!
Mikaela, one of the owners of Ranch Eats, told Optopolis that they will be opening on Monday, June 2nd, 2025. As seen above, a sign in the walk-up window of the store indicates that their hours are currently set to be Monday to Friday at 7 AM to 2 PM.
Update 05-23: In a visit made on May 23rd, Troy, one of the owners, told Optopolis that they want to offer fresher and locally-sourced food options instead of pre-packaged goods. Although their main thing is food, they will have coffee, juice, lemonade, and other beverages available. They plan to make use of the walk-up window and (if things work out) may soon expand upon the walk-up window concept left over from Ziggi's Coffee. They anticipate having a grand opening event in the coming weeks once they get all the early days-jitters handled.
Update 07/01 - Ribbon Cutting scheduled
At 4:30 PM on Wednesday, July 9th, Cheyenne's Red Carpet Committee which is with the Greater Cheyenne Chamber of Commerce will be holding a ribbon cutting. At the time of this update, no ambassadars are listed on the Facebook event page.
