CHEYENNE - A specialty shop called Olive and Herb Co. that offers various cooking ingredients and even cooking classes is now in the process of expanding to Cheyenne's Greenway Commons Plaza along Stillwater Avenue!
A look at the history
First: What's Olive & Herb Co. and their story?
Olive and Herb Co. is a specialty food and kitchen shop that started in Windsor, Colorado as The Bottled Olive under the ownership of Colorado-resident Michelle Krusmark. Opening in October 2017, the idea of The Bottled Olive seemed to have caught on fairly quickly; on June 30th, 2019, Krusmark opened a second location at The Promenade Shops at Centerra, found in eastern-Loveland, Colorado. One thing that the store became known for is having olive oil and other cooking liquids available on tap!

In 2020, Krusmark sold her Windsor location to Amanda Hiller, one of many who wound up getting laid off from other jobs during COVID. The Greeley Tribune notes that Hiller loves to cook, and after being laid off, she decided she wanted to become known as the olive oil lady. The Greeley Tribune noted in 2023 that, "The store features over 50 different flavored infused oils and vinegars that can be used to make marinades and dressings," which can be used for baked goods, grilling meats and vegetables, among many other uses.
This wasn't even close to the end, however. After a few more years, Olive and Herb opened another new location, this time in Greeley Colorado. According to the Greeley shop's Facebook page, the Greeley location celebrated their grand opening on June 20th to June 25th in 2023. It opened next to Berry Blendz and across from Bank of America, along West 10th Street.

According to Olive and Herb's About Us page, Krusmark, "decided to start a new adventure and sold the stores to two couples who started out with her in Windsor," in December 2024. At this point, Trish, Kevin, Linda, and Don began, "building upon Michelle's vision of Olive and Herb by offering many new products and bringing new ideas to the cooking classes." Currently, both the Loveland and Greeley stores are still operating, although the Loveland location was swapped to a different space at the Promenade. Trish recently posted to her Facebook page that as of January 1st, 2025, she is now the Owner/Manager/CEO at Olive and Herb.
Second: History of the Mi Tierra space
Most recently, this space in the Greenway Commons Plaza was occupied by Mi Tierra Mexican Restaurant which recently shifted its locations around and opened a new location along East Lincolnway.

Prior to Mi Tierra, this space was used as an "Express" location for Tortilla Factory, which still has a location along South Greeley Highway. The property assessor indicates that the spaces making up Greenway Commons were built in 1997.
Cheyenne's new Olive and Herb works to open, plans Grand Opening
In recent months, it was discovered here at Optopolis that something was happening inside of the old Mi Tierra restaurant on Stillwater Avenue. In late May 2025, Trish Schlegel, one of the four people mentioned above who took over the shop's ownership, reached out to Optopolis and indicated that Olive and Herb would be taking over the Mi Tierra space, with a planned grand opening on Tuesday, June 3rd (less than two weeks away at the time of writing).

It appears that the Cheyenne location already has a pasta-making class scheduled for Saturday, June 14th at 10:30 AM to 12:00 PM. In addition, Trish, the owner, informed Optopolis that the Cheyenne location will be similar to the Loveland one, in that it will have liquids like vinegar and olive oil on tap! Trish told Optopolis that they supply the bottles for tap use.
A look at the Wyoming Business website reveals a recently-formed business filing for Olive and Herb Inc. The initial Filing document lists several officers and directors of the entity, which are President Kevin S. as well as Directors Patricia S., Linda T., and Don T.; the filing also indicates that Trish is the registered agent.
The Olive and Herb website also references the new Cheyenne location which is located in Suite G at 1507 Stillwater Avenue. The hours displayed at the bottom of their website indicate that the Cheyenne location will be open during the following hours:
- Mon-Sat 10 AM to 8 PM
- Sunday, 11 AM to 6 PM

Olive & Herb opens Cheyenne store
On May 22nd, 2025, the store softly opened to the public as confirmed by a post from Trish in the Cheyenne Community Connections Facebook Group. As stated above, the store plans to hold a grand opening on June 3rd. Yes, they have gluten-sensitive options on their food products (most of which are to the right of the spices shelf at time of writing). Yes, they have other food besides pasta, although cooking ingredients are their focus. Yes, the Cheyenne location will have classes to teach people about cooking. Yes, they do the so-called bottle exchange at the Cheyenne location.
Workers told Optopolis that Olive and Herb's oils are pressed less compared to your average bargain brand (only once instead of multiple times), in addition to being flavored; they plan to add even more choices of oil to the Cheyenne store soon. Some of their various products including their oils generally come from Italy, along with some of their other items available for purchase, while other items are sourced regionally, such as some of their coffees which are produced in Estes Park.
Trish as well as another worker told Optopolis that anyone can come into the classes if they want, although visitors are encouraged to sign up. Trish told Optopolis that visitors can sign up for classes online, or, alternatively, they can call the store to sign up (you can also follow their Cheyenne Facebook page). As mentioned above, there is already a Pasta class scheduled for Saturday, June 14th. In addition, Kevin, one of the other owners, told Optopolis that they are working to potentially set up a Sourdough-making class for early June.
